Passport & Plate - Beyonce Of All Cheesecakes

Ingredients
DOUGH: 150g* crushed biscuits (Petit Buerre kind, or McVitalis)
50g whole almonds (roasted** and grounded)
50g of butter (melted)

CREAM: 350g white chocolate
125ml sweet cream
700g cottage cheese
50g powdered sugar
4 eggs

TOPPING: 450ml sour cream
50g powdered sugar
OR
450g of forrest berries
150g of sugar
1,5 dl water
OR
nothing

*I hope that it is of none problem that I have left the measurments in grams, or deciliters.
**Roasting the almonds means to put them in the oven, 100 degrees or more, for at least 10 minutes, but not more.

 

How to prepare this recipe
- Firstly you will have to make a complete mess out of your kitchen while crushing those biscuits, or you are a pro and will use some kind of technology for this part.
Important is that you make a compact mixture of all these ingredients which then you put in a cake mold. After done that, you put cake mold into the owen for 5 min on 180 degrees, or you can put it in a fridge until baking the cake itself completely.

- Next step is rather interesting.
Cut the white chocolate on smaller pieces and together with the sweet cream leave it to melt and compose together.
*Yummy to lick the pan after :)*
While melted, leave it to rest.
Mix your cottage cheese with powdered sugar, while adding the eggs - but gradually - one egg at the time. Now, you can use the mixer to make the cream more light and creamy.
*While doing the second step feel free to drink coffe with your friend, adding some rum to their coffe while he/she is not looking :)*
Then, when eggs, cheese and sugar are altogether, add melted white chocolate. *Favourite part*. Get the cake mold and sip it right into.
Kiss everything goodbye to the owen for 45 minutes, on 150 degrees.

- Topping part is rather whatsoever, which means - as you please. Yesterday I was in the berries mood, so i bought forozen berries, which you unfrost first, put it in a pan, add sugar and water, and mix it while the mixture becomes rather thick.
Or, you can just mix the sour cream with sugar and then sip it over the cake. In this case, cake must be rather coldish, meaning you put it out, leave it for half an hour and then sip it with mentioned topping AND return the cake back in the owen for five more minutes.
For both of toppings it is necessary that cake gets colder and more compact first.
Anyway, the case wanted that my sister just could not wait for any of the toppings as you will see on the photograph.

 

The story behind this recipe
There is no just one story behind this recipe. There is at least three of them. Stories include the way my sister began to likue cheese, one bet my friend made, and one summer of my life.
My sister could not stand cheese in anything, but the rest of the family was convinced that she was doing so because the rest of us like cheese. You know, those years when you hate everything your family does not. So, we found this recipe in the newspapers.. And I made it, on her birthday. She was so happy, so thrilled and amused with this cake that it was almost romantic how she fell in love with this cheesecake. Even now, she always makes sure that she is the one whose first slice will be, though the cake is actually done or not.
The bet story is about my ability to bake and cook. I am actually a really good cook, the fact which is unknown to all of my friends, sadly or not. So, we were arguing about women in kitchen an stuff like that, just to make ourselves laugh - me and my friend made a bet that he will make a better cheesecake than me. There is no need for explaining. Except the fact that after winning the bet, my friends actually did not know what to think about me, for I am always the one staying away from the kitchen. This is the cake my reputation praise goes to :D
And the last, but not the least story is story about this summer. Summer 2013 was marked with this cake, we were making it several times, which is truly unusual since we rather spend our afternoons at the beach than in the kitchen. I was spending my summer with my friends and the moments while we were making the cake were one of those - infinite moments. Moments of weird harmony, where everybody laughs and nobody is bored, moments which feel as if you could watch them on television in some movie.
That is why this is THE CAKE. It is everything that I like, in just one bite. It is my friends, my family an my summer memories. And that is something that counts, regardless of calories that cake contains :)
