Receipt of “cazuela de pollo”

ingredients:
3 drum sticks or 3 chicken thighs
3 Cloves garlic
1 Red pepper
2 Corn
1 carrots
1 Onion
6 small potatoes
a little amount fresh cilantro
some species (salt, oregano, merken)


How to prepare this récipe

The secret to a good “cazuela de pollo” resides in a good quality stock of the vegetables; to know how many water you need, you can use these tip: 2 cups of water per person for cooking. Some liquid is inevitably lost to evaporation and absorption by the chicken and vegetables.

First you have to prepare the vegetables: smash and divided the garlics, shred red pepper, cut into 25 mm chunks carrots, peel potatoes, chop cilantro and onions.
Second In a large soup kettle, place chicken, potatoes, corn, and carrots and bring to a boil, add salt, merken and oregano. Reduce heat; cover and simmer for 30 minutes or until chicken is done and vegetables are tender.

Finally you have to serve, to serve this plate you can use a soap plate but in chile its typical serve in the red clay pots, known as greda plate.
Place a piece of chicken, a whole 2 potato, one corn, a couple carrots, some amount of onions in a soap plate. Ladle broth over the vegetables to partially submerge them. Sprinkle with cilantro, and you have it your “cazuela de pollo”.





The story behind this recipe

This recipe is very common in Chile, I know this since I can remember but the first day I can appreciate this recipe was when I come back from a travelled to Chiloe(south of chile) with friends I have to mentioned who go with my in this adventure ignacio my “tent-mate” (we shared the tent) and two couples friends matias and angela, Pablo and conny .
We were in camp for like a 2 weeks, some days we did not have much to eat, but always we have a lots bottles to drink (alchol), we spent a lot of times in party’s (“fiesta de la luna”) meeting many new people, was an amazing trip I can still feel the energy of the drums playing during every day and night, and the people dancing around the fire.
So as you can imagine when I came back the first place I could return was to my grandmother house, I was dehydrated hungry bearded, my grandmother looked at me and said: what happen to you. I really don’t remember what I said but I only remember I was really but really tired I just go to get a shower and sleep when I woke up my grandmother had cooked me maybe the best “cazuela de pollo” ever, I still remember what I felt when I taste this, you just can’t imagines, it was like to born again.




why I have to be choosen

I would like to start with why I choose to be The Anthropologist I feel really identify with the description I am from Chile and actually I am in Stockholm, Sweden like an exchange student for one semester, I came to Stockholm to learn about other culture, to meeting new people and to enjoy whatever life can give to me. I really enjoy when I learn something new, when I knowing new people, how they thinks, what they wants.
Here in Stockholm I have the luck to taste a lot of different types of cakes and sweet food the most recently thing that call my attention was “semlor”, in Sweden they have like a special day for these little sweet tipe of cake (semlor), the day when I eat these I was a little sad really I missed my family, but a friend offered me out of nowhere after training karate the truth was she was surprised me because she had full tray of semlor with she, and I asked why you have so many and she said me is semlor day.
How semlor can have a day? Well I think about it and I think it’s because the weather, the weather is really cold these days and maybe the society invented something like these to warm the family in these country.
I really enjoy eating jaja if I be chose I am sure I would be enjoy the trip and have fun meeting new people during these trip.
