Ingredients
Fresh tomatoes
Fresh bell peppers
Carrots
Cow hide (soft ones)
Lettuce
Italian Seasoning
White pepper
Paprika spice
Salt to taste
Olive oil
Eggs

 

How to prepare this recipe
Wash all the ingredients properly. Dice the tomatoes, bell peppers, carrots and cow hide. Cut the lettuce and keep aside.

In a frying pan, add about 2 tablespoons of olive oil and put on medium heat. When it is hot enough, add your fresh tomatoes and allow it to cook for about a minute or 2. Add your pepper, carrots and cow hide. After about 2 minutes of intermittent stirring, add your Italian seasoning, white pepper, paprika and salt to taste as desired. Continue stirring till carrots is as soft as you want it to be. Add your eggs to this mix and stir till the eggs are properly cooked and scrambled. Before you set aside, add the lettuce and stir for 30 seconds to 1 minute.

Serve with rice, bread, fried or boiled plantains, fried or boiled yams or as you desire.
