Passport & Plate - Spinach and Bacon Flatbread

Ingredients
Flatbread:
white flour
plain yogurt (serbian yogurt)
salt
baking powder
butter
Meal:
cherry tomatoes
spinach
red onion
olive oil
bacon
feta cheese
mozzarella
oregano
How to prepare this recipeFirst start off with baking the flatbread. Take 100g of white flour and 100mL of yogurt and mix it together, add in 1/2tsp of baking powder and a pinch of salt and stir until thick. If it's too sticky add some flour. Dust a wooden board or counter with flour so the dough doesn't stick, and flatten it out into two circles. Then grill :)
Once that's done, it's time for preparing the actual meal.
This recipe is a slight variation of an actual recipe which I read in order to learn to make this, so I will be changing some things around as I believe it would taste better that way.
Sautee the spinach in red onions, as opposed to garlic. Proceed to cut all the ingrediants up.
Now you can take some olive oil and brush the two pieces of flatbread which you made. On it, spread the mozzarella and feta cheese pieces. Over that, you can place the spinach and onions, bacon and cherry tomatoes. Now that you've piled everything on, you can also put some parsley if you like. I personally like to put parsley in everything.
Now sprinkle some oregano for taste.
While you're doing all this prep, you should preheat your oven to 250 C. Now stick in the two little masterpieces and bake for 20 minutes.

The story behind this recipeLiving these past few years away from my sister and her family have taken a toll on me. Even when I visit, in the complete hustle my entire stay is unpredictable. Nonetheless, what I know I can expect every time, is the Sunday dinner ritual. To make dinner both hedonistic and educational, my sister and brother-in-law proposed that their sons, my nephews, participate in a little game called "spin-the-globe." Every Sunday after dinner, the boys would together spin the globe, close their eyes and blindly select a country with their index finger. One 2012 evening, I was over at their place, and they selected Italy. Since I had spent some time studying in this country, I was given the task of picking the meal, and I chose the pizza-esque flatbread. The idea is to put whatever you like as toppings, but to essentially make a variation of the Italian pizza, nonetheless. While in Lanciano, my friends and I really experimented with the food. I remembered trying a variation of this, because the ingredients which the flatbread was topped off with were ones that gave birth to my taste buds :) The fact that it was flatbread and not regular pizza gave an interesting spin to it as well. Back at my sister's house, the family and I got ready to head down to the main market. We got what was needed, with M screaming for family hugs every 10 steps. The market was busy, the spinach hard to find, but finally we got home and made the meal. I like to make the meal my own by changing around the ingredients so we made it more personal. The evening started off with L giving us a little introduction on Italy and what we would be eating. After the very impatient Buon appetito, we all dug in.
