Passport & Plate - Caribbean Style Pina Colada Chicken n Waffles


Ingredients
Waffle-
Use your favorite waffle mix! I add nutmeg and coconut oil and coconut milk into the batter for extra flavor.
Coconut Fried Chicken-
1-2 boneless/skinless organic chicken breasts per serving
Marinade-
1 cup Buttermilk
Dash of Vanilla extract
Tsp fresh grated nutmeg
2 shots of Coconut rum
Salt n pepper
Batter-
3 whipped egg whites
2 cups Shredded coconut
2 cups panko bread crumbs
Salt n pepper
Rum brown butter syrup-
2 tbl spoons butter
1/3 cup organic maple syrup
1 banana
1/2 cup fresh pineapple
Shot or two:) of coconut rum
Pinch of salt

 

How to prepare this recipe
First clean your chicken breast of any excess fat. Pound to a thin cutlet size. This ensures that your coconut doesn't burn when fryin it. Next out your marinade in a separate bowl or just whip it up and put in a ziploc bag. Marinate overnight.
Once your chicken is marinated take it out, pat dry, and let it come to room temperature. Perfect time to mix up your waffle mix. Let waffle mix proof for about 10-15 mins. In the meantime you can make the sauce. Heat a saucepan to med/high. Saute butter and brown til medium blonde. Next add your syrup, bananas, pineapple,and spices. Sauté til just barely softened and incorporated. Next gently add in your rum! Flambeau til alcohol is dissolved. Set aside.
Aright time to fry up that chicken! Heat oil to 350 in a cast iron skillet or deep fryer works great too! Whip up egg whites in separate bowl, and panko and coconut in seperate bowl as well. Dip your chicken first in egg then into the coconut/Panko. Fry em up for around 10-15 minutes til golden brown.
While they are fryin that's when I like to cook the waffles!
For assembly put down 1 nice size waffle on the plate and top it with the chicken then drizzle the whole thing with the syrup!

I am a Southern/Country cook. I absolutely love to travel and take all my favorite foods from different cultures and re-create dishes with a Southern twist!
I spent a month in the Caribbean last year and I just loved how they coconut fried everything from chicken to lobster tails!
Well who doesn't love chicken n waffles, right?!
I came up with the idea to do a play on Chicken n Waffles and came up with the recipe for Pina Colada Chicken n Waffles. Takes me right back to the Bahamas with every mouth watering bite!
