Los Azufres

Passport & Plate - Mole de Los Azufres


Ingredients
5 Poblanos Chilis
5 Guajillo Chilis
1/2 Yellow Onion
4 Cloves of Garlic
4 Cloves
4 Balls of Whole Black Pepper
1 Banana
1 handful of tortilla chips
2 1/2 Tablespoons of sesame seeds
1 Handful of peanuts
1/2 Round of NESTLE Abuelita chocolate
1/2 Handful of raisins
1/2 Cinnamon Stick
Salt, as desired

Chicken broth
Olive Oil (for frying)

 

How to prepare this recipe
1. Combine all ingredients
2. Toast on the stove until most ingredients turn golden-brown
3. Let all ingredients soak in the chicken broth and simmer for five hours
4. After five hours, take off the stove and blend in blender
5. Add olive oil to pot and wait for it to heat up
6. Once oil is heated up, poor mole into pot and let it simmer for two hours , while constantly stirring

 

The story behind this recipe
My family is from Michoacan, Mexico and whenever we get the chance, we like to visit Los Azufres-- Mexico's hot spring region. Holistic remedies are practiced widely throughout the Mexican culture, and it is said that these springs have healing powers. The springs feel better than any jacuzzi could ever make you feel. We typically leave early in the morning to make the trip to Los Azufres and there is a cabin to stop at to eat on the way up the mountains. Indigenous people own the cabin and prepare all the food for you right in front of you. We now stop by there every time we go because of how good the food tastes and how at peace it feels to be up in those mountains early morning. The three things I always get whenever I'm there is quesadillas, mole, and their cafe de olla. Unfortunately, I've now realized that recipes tend to be top secret and family heirlooms in Mexican culture, however, I'm blessed to have to amazing parents with a variety of great Mexican recipes. We've recreated a mole recipe that may not be the same as the one in that cabin on the way to Los Azufres, but it's honestly just as good.
