Photos: Passport & Plate - Unashamedly Ordinary Banana Muffins

Ingredients
Muffins
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1 tbs. Orange Juice
1 tsp. Vanilla
1/3-cup butter, melted

Streusel
1/3 cup packed brown sugar
1/4-cup all-purpose flour
1/4 tsp. ground cinnamon
1 tbs. butter

Don't forget to add a bit of L-O-V-E :)

How to prepare this recipe
Before you start:
*Pre-heat oven to 375 Degrees
*Grease muffin tins or use muffin cups
*Mash 3 Ripe Bananas in a bowl

Muffins
In one bowl, stir the flour, baking soda, baking powder, and salt.

Next in a different bowl stir together the bananas, sugar, egg, vanilla, orange juice and melted butter.

Pour the flour mixture into the banana mixture a bit at a time then stir until mixture is moist.

Use a spoon to pour the mixture in the muffin tins.

Streusel
In a small bowl, mix together brown sugar, flour and cinnamon.

Chop in butter and mash with a fork until the mixture resembles crumbs.

Sprinkle the topping generously over the muffins.

Bake in the oven about 20 minutes, until a toothpick the toothpick comes out clean or the muffins are a golden brown.

Serve immediately and enjoy!

The story behind this recipe
Believe it or not, I came quite close not to entering this contest. You’re looking for a mouth-watering recipe that’s been passed on for perhaps generations and quite frankly, I wasn’t sure my recipe would make the cut. It’s just an ordinary recipe, very simple to make and not especially unique. I wondered upon hundreds of entries, how mine would possibly stand out. Yet, no other recipe has quite the same meaning to me – this one is special. For it’s less about how I make it and more about why I make it. So bear with me as I tell you the story behind my very humble, unashamedly ordinary Banana Muffins.

I started making these muffins one day when I was off from work. My refrigerator was rather empty and all I could find were three overripe bananas. Why not, I thought? I found a Banana Muffin recipe that looked decent and got to work. I tend to be a bit rebellious when it comes to baking so I used the found recipe as a guide and sneaked in a few ingredients of my own. I didn’t have high expectations for these muffins but shared them with my family anyway. Imagine my surprise when they told me how great they were! In fact after tasting one myself, they were delicious! They were comforting, full of flavor and we ate them all.

Ever since then my family requests these muffins when they want something warm to eat for breakfast or dinner. My dad buys bananas and lets them get overripe just so I can make these muffins! I've found the ingredients that work the best and the recipe is now completely my own. Although it may not be the most exciting recipe in the world or a recipe that my family passed on years ago, it’s a recipe that brings joy to my family and that’s why it means so much to me!
Your Backyard - The Bottom Dollar Dog

I have lived in Alexandria, VA all my life and have passed by what is currently "The Bottom Dollar Dog," countless times. Up until recently I had no idea it had reopened. One day I stopped in for a hot dog, talked to the owners and knew this was a place everyone should know about! That is my passion, bringing locals and tourist alike to little heard of shops and restaurants in Virginia and D.C. There are so many places run by good people who provide great products but more than that, great relationships. I have always had a passion for acting and being on camera. I've studied theatre for years and have done some presenting. However, my greatest experience so far was the launch of my travel guide & web -series "On The Go With Glo." The series features all of the best things to do, see & eat in VA, and D.C. And it's truly what I want to do from now on. Sharing stories, and delving into new adventures, that is what I live for! My goal would be to write, produce, and host my own show for a major TV travel network. This scholarship would literally mean the WORLD to me. It would help me take my presenting skills to the next level and bring me one step closer to achieving my dreams!
