Photos: Passport & Plate - Tuscan grape cake

Ingredients
2 whole eggs and one yolk extra
150 g sugar
120 g flour
125 ml olive oil
2 tspoons of baking powder
1 tblspoon of vanilla extract
zest of one orange
3 grated apples

How to prepare this recipe
Preheat the oven to 175 degrees Celsius. Mix up eggs and sugar until the lighten in colour and thicken, add the remaining ingredients. Grease a pie mould and flour it a bit, pour in the mix and bake for an hour. It's that simple!

The story behind this recipe
This is a really old, simple Tuscan recipe for a light cake that was the fare of field workers. Since i a mabsolutely in love with Italy, and all the ingredients are available fresh in Croatia too, i made this cake for the first time after our trip to Tuscany. Despite it being a very basic recipe, it was an instant hit and became a favourite of ours (my husband's and mine), and is made regularly.
