      <title>Passport &amp; Plate - Pav Bhaji</title>
      <description>&lt;b&gt;Ingredients&lt;/b&gt;&lt;br/&gt;Potatoes		400 gms&lt;br/&gt;Carrots			200 gms&lt;br/&gt;Cauliflower		200 gms&lt;br/&gt;Green peas		150 gms&lt;br/&gt;Tomatoes		4 medium size&lt;br/&gt;Spring onions		100 gms&lt;br/&gt;Butter			150 gms&lt;br/&gt;Bread rolls		6&lt;br/&gt;Coriander leaves	2 tsp&lt;br/&gt;Pav bhaji spice		2 tsp&lt;br/&gt;Lime			1&lt;br/&gt;Ginger-garlic paste	2 tsp&lt;br/&gt;Water			2 cups&lt;br/&gt;Salt to taste&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;b&gt;How to prepare this recipe&lt;/b&gt;&lt;br/&gt;Method:&lt;br/&gt;&lt;br/&gt;Boil the potatoes until they are soft. Blanch the cauliflower and carrots in boiling water. With a potato masher mash the potatoes, cauliflower and carrots.&lt;br/&gt;&lt;br/&gt;Chop the capsicum, spring onions and tomatoes very fine and keep them separate. &lt;br/&gt;&lt;br/&gt;Take a large frying pan and while it’s hot add 50 gms of  butter and fry the spring onions. Then add the capsicum and stir fry it till its soft.  Then add the chopped tomatoes and peas  and let it cook for 5-7 minutes until it’s soft.&lt;br/&gt;&lt;br/&gt;Now add the mashed potatoes,  cauliflower,  carrots,  ginger-garlic paste and the pav bhaji spice and 2 cups of water. &lt;br/&gt;&lt;br/&gt;Keep on stirring the mixture  and mashing it with the potato masher until its soft.&lt;br/&gt;&lt;br/&gt;Finally add the chopped coriander leaves and salt.&lt;br/&gt;&lt;br/&gt;Serving:&lt;br/&gt;Slice the bread rolls in the middle into two. Heat up a fry pan and add  50 gms of  butter.  When the butter begins to melt toast the bread in it and mop up the butter.&lt;br/&gt;&lt;br/&gt;Serve the mashed vegetable, with a blob of butter in the centre of it and decorate it with chopped spring onions and squeeze some lime juice over it.&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;b&gt;The story behind this recipe&lt;/b&gt;&lt;br/&gt;I have travelled to Mumbai many times and I have seen lots of people enjoying this dish. It's a simple vegetarian dish by itself and very reasonable priced. Thousands of street vendors make a living by feeding many thousands of people. Since this dish is cooked over a large hot plate, I have never heard anyone falling sick from eating this dish.</description>
