Passport & Plate - Perepechy

Ingredients
Dough:
1/2 cup warm milk
1/2 cup kefir
1/2 cup warm water
2 tablespoons sunflower-seed oil
2 1/2 cups all-purpose flour
pinch salt
3 eggs

Topping 1:
7 potatoes
a piece of butter
1 egg

Topping 2:
half a head of cabbage
3 eggs

How to prepare this recipe
1. Add milk and kefir to the water and stir.
2. Add oil and salt.
3. Add the eggs, then the flour. Blend until the mixture has an even consistency.
4. Knead and roll out the dough. Dough should be 2 mm of thickness.
5. Prepare the topping 1. Wash and peel potatoes. Then boil them.
6. Prepare smashed potatoes, add 1 egg, pinch salt, butter and mix it.
7. Prepare the topping 2. Chop the cabbage and stew it for 15 minutes. Then add eggs and salt. Mix it.
Now, the dough and the toppings are ready.
?ut out circles with a diameter of 10 cm from the dough. Press dough's edges in a circle. Put the topping in baskets.
Put the perepechy in the oven for 15 minutes.
Bon appetit!

The story behind this recipe
The Perepechy is the national Udmurt dish. Udmurt respublic is the piece of big Russian Federation. It is my native land.
I was 8 years old when I firstly tried to cook them. Of course, I failed. But it wasn't my only attempt to cook them. My Granny taught me 5 years ago. Now I can cook them pretty well and I'll teach my children in the future. You can cook them with different toppings. It can be mushrooms, meat or even millet porridge.
