A Taste of New Zealand - Whitebait Fritters

New Zealand whitebait are small, sweet translucent looking worms. Sound appetising? YES!

A tasty way to eat them are in fritters. Unlike Australian Whitebait which are larger and can be fried individually, NZ Whitebait are so tiny and delicate you have to be careful not to over power them with too many strong flavoured ingredients.

Below is a simple but delicious recipe for you to try at home. Or you could always just travel to New Zealand for a taste …

Whitebait Fritters - Serves 2

Ingredients:

250g (8oz.) Whitebait

2 eggs

butter

Salt and Pepper

Directions:

Place 2 eggs in a bowl and whisk with a fork until slightly frothy. Be sure to do this before you add the Whitebait so you don't mash the poor little guys!

Add salt and pepper and stir, then add the Whitebait

Add butter to a hot pan (make sure the butter doesn't brown)

Add spoonfuls of the mixture and cook for a minute each side

Drain on paper towel once cooked

Squeeze on some lemon and ENJOY.
