Ceviche
Buy minced fish (the one you fancy, but white fish is best Pilapia).
Cook it in water, so that the water covers half the fish and add lemon (lime) and cucumber finely chopped, tomato, onion, coriander and green chilli. Serve with toasts.
My favourite dish: but I’ve yet not eaten it here because it is the most dangerous dish to eat out. Now that I have the recipe (also Julio’s mother!) I can make my own, a pity he hates anything that lives below water… but all the better I’ll have more!
