Calabazitas rellenas
I tried to make French “Stuffed Courgettes”, obviously anything I cook here has a Mexican taste to it. In this case, I’ve replaced the sausage meat by chorizo. Turns out well, Julio found it very good and also very unusual: he took a picture of it!
Chop off the top part of round courgettes and remove most of the flesh with a spoon.
Chop half an onion and 2 chorizos (as many chorizos as there are courgettes; chorizo comes in sausages, mince them) and mix them together to make the stuffing. Also add a little of the courgette’s flesh, but only a little otherwise you won’t be able to fill them up again.
Fill the courgettes with the stuffing and put the cap back on. Place into a dish and into the heated oven for 45min.
It has a nice spicy taste; coming back to Europe dishes will seem a little more bland!
